Zuchetta Calabacitas on the Rocket Stove

Don’t worry, I didn’t know what it was either, but it was scrumptious.  The story goes: I have these huge zuchettas growing on the vines…

And I had a hankering for mexican food.  Put the two together and you have…calabacitas! (Thanks to A Life From Scratch for the recipe) 

All the recipes we use are loosely followed since all of our cooking is done in cast iron on our rocket stove.  Not many recipes are set up for this sort of thing.  Here is my version of zuchetta calabacitas on the rocket stove:

Ingredients:

1 lb ground pork

1 small onion

4 cloves of garlic

1/2 a 2 ft zuchetta (medium zuchini)

3 tomatoes

1 cup corn

1 tsp cumin

1 tbsp fresh oregano

Cheddar cheese

Brown the pork.

 

Add in the onion, garlic, and squash.  Once the squash is soft, add in everything else.

Once the tomatoes are cooked down, add the cheese on top and take the pan off the heat.  If the cheese is nicely spread…
